Lemon Zucchini Muffins

Lemon-Zucchini Mini Muffins
Yield: 48 mini muffins • Preparation: 25 minutes • Bake: 7 to 8 minutes

  1. 1¾ cups all-purpose flour
  2. ½ cup sugar
  3. 1 tablespoon fresh lemon zest
  4. 1½ teaspoons baking powder
  5. ½ teaspoon baking soda
  6. ¼ teaspoon salt
  7. ½ cup finely shredded zucchini
  8. 2 large eggs, lightly beaten
  9. ½ cup salted butter, melted
  10. ½ cup whole buttermilk
  11. 1 teaspoon lemon extract
  12. 1 recipe Lemon Glaze (recipe follows)
  1. Preheat oven to 400°.
  2. Spray 2 (24-well) mini muffin pans with nonstick baking spray with flour. Set aside.
  3. In a large bowl, combine flour, sugar, lemon zest, baking powder, baking soda, and salt, whisking well. Set aside.
  4. Place zucchini in a dish towel, and wring out excess moisture. Set aside.
  5. In a medium bowl, combine eggs, melted butter, buttermilk, lemon extract, and zucchini, stirring until blended. Add to flour mixture, stirring just until incorporated. (Overmixing will cause muffins to be tough.)
  6. Using a levered 2-teaspoon scoop, drop batter into wells of prepared muffin pans.
  7. Bake until edges are golden brown and a wooden pick inserted in centers comes out clean, 7 to 8 minutes. Remove muffins to a wire rack.
  8. Dip tops of muffins into Lemon Glaze, letting excess glaze drip off sides. Return to wire rack to let glaze dry.
  1. • Store finished muffins in an airtight container at room temperature for up to 1 day.

Lemon Glaze
Yield: ⅓ cup • Preparation: 5 minutes

  2. 2 tablespoons fresh lemon juice
  1. In a small bowl, combine confectioners’ sugar and lemon juice, whisking until smooth.
  2. Serve immediately.

  1. These muffins are absolutely delicious! You must try these. I made 24 with this recipe so mine were a little more substantial and that was perfect for our party. These were quick and easy to make and lovely lemon flavor.
