Steamed Open by Barbara Ross

Raspberry Muffins
 
Makes about 12 Muffins
Ingredients
  • ¼ cup butter
  • ¼ cup sugar
  • 1 egg
  • 1 cup milk
  • 2½ cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup crushed raspberries
Instructions
  1. Preheat the oven to 400°F.
  2. In a large bowl, cream the butter and sugar.
  3. In a separate bowl, beat the egg and add the milk.
  4. In a third bowl, mix the flour, baking powder, and salt.
  5. Gradually alternate adding the dry ingredients and then the milk and egg to the creamed butter and sugar.
  6. Stir in the crushed raspberries.
  7. Bake in greased muffin tins for 20 to 25 minutes.
