No-Bake Caramel-Apple Mini Tartlets

No-Bake Caramel-Apple Mini Tartlets with their sweet caramel filling can be assembled in just 20 minutes.

No-Bake Caramel-Apple Mini Tartlets
Yield: 24 tartlets • Preparation: 20 minutes

Ingredients
  1. 1 (8-ounce) container mascarpone cheese
  2. ½ cup dulce de leche*
  3. 24 mini phyllo cups, such as Athens
  4. ½ cup finely diced apple, such as Gala
Instructions
  1. In a medium bowl, combine mascarpone and dulce de leche. Beat at medium-low speed with a mixer until smooth and creamy. Transfer mixture to a piping bag fitted with a large open-star tip (Wilton 1M). Pipe a decorative rosette into each phyllo cup.
  2. Top tartlets evenly with diced apple.
  3. Serve immediately.
Notes
  1. * Dulce de leche is canned caramel milk. Look for it in the canned-milk section or the Hispanic-foods section of grocery stores.
  2. • Filling can be made a day in advance and stored in a covered container. Stir to loosen before transferring to piping bag.
  3. • To prevent browning, dice apples just before using.
