Pastrami Tea Sandwiches

Pastrami and Swiss cheese are a welcome treat in Pastrami Tea Sandwiches.

Yield: 12 tea sandwiches • Preparation: 20 minutes

Ingredients
  1. 6 slices Swiss cheese
  2. 6 slices swirled white and wheat bread, such as Pepperidge Farm Farmhouse Style
  3. 1 recipe Russian Dressing (recipe follows)
  4. ⅓ pound thinly sliced deli pastrami
Instructions
  1. Using a 2-inch square cutter, cut 12 squares from cheese. Set aside.
  2. Using a 2-inch square cutter, cut 24 squares from bread. Spread ½ teaspoon Russian Dressing onto each bread square. Top 12 bread squares, dressing side up, each with a cheese square. Ruffle pastrami, and place on top of each cheese square. Top with another bread square, dressing side down. Top each with remaining bread squares, dressing side down.
  3. Cover sandwiches with damp paper towels to prevent drying before serving time.
Notes
  1. • Bread squares can be cut a day in advance and stored in a resealable plastic bag. Russian Dressing can be made a day in advance and refrigerated in an airtight container. Sandwiches can be made earlier in the day, covered with damp paper towels, and refrigerated in an airtight container.

Ingredients
  1. ½ cup mayonnaise, such as Hellman’s
  2. 1 tablespoon bottled chili sauce, such as Heinz
  3. 1 tablespoon sweet pickle relish
  4. ½ teaspoon finely minced shallot
  5. ⅛ teaspoon ground black pepper
Instructions
  1. In a small bowl, combine mayonnaise, chili sauce, pickle relish, shallot, and pepper, stirring to blend. Refrigerate in a covered container until needed.
