Preacher Cookies

These old-fashioned no-bake cookies earned their name because they can be made quickly and easily—like when the preacher shows up at the door unexpectedly.

Yield: 36 cookies • Preparation: 15 minutes • Cook: 3 minutes

  1. 1½ cups sugar
  2. ½ cup butter
  3. ½ cup whole milk
  4. ½ cup almond butter
  5. 3 tablespoons natural unsweetened cocoa powder
  6. 1 teaspoon vanilla extract
  7. 3 cups quick-cooking oats
  8. ½ cup sliced almonds, toasted
  9. ½ cup shredded, sweetened coconut
  10. ½ cup dried cranberries
  11. Garnish: chopped almonds and dried cranberries
  1. Line 2 baking sheets with waxed paper. Set aside.
  2. In a medium saucepan, combine sugar, butter, and milk. Cook over medium-high heat until butter melts and is combined, stirring constantly. Bring to a boil, and boil for 1 minute. Remove from heat.
  3. Add almond butter, cocoa powder, and vanilla extract, stirring until combined. Add oats, almonds, coconut, and cranberries, stirring to combine.
  4. Using a levered 1-tablespoon scoop, drop mixture onto prepared baking sheets.
  5. While cookies are still soft, garnish with chopped almonds and additional cranberries, if desired, pressing slightly to adhere.
  6. Let cookies sit until firm.
  7. Store in a covered container in the refrigerator for up to 2 days.
  1. These cookies are gluten-free, provided gluten-free versions of processed ingredients (such as oatmeal and vanilla extract) are used.
