Snowy Lime Cookies

Ingredients
  1. 1 cup salted butter, softened
  2. 1 teaspoon lemon extract
  3. 1 cup confectioners’ sugar, divided
  4. 1½ cups all-purpose flour
  5. 6 tablespoons lime-flavored gelatin powder
  6. 1 cup chopped roasted and salted macadamia nuts
  7. Garnish: confectioners’ sugar
Instructions
  1. Preheat oven to 350°.
  2. Line 2 baking sheets with parchment paper. Set aside.
  3. In a medium bowl, combine butter, lemon extract, and ½ cup confectioners’ sugar. Beat at low speed with an electric mixer, gradually increasing to high speed, until smooth. Scrape down sides as necessary. Add flour and gelatin powder, beating at low speed until smooth. Add nuts, stirring to combine.
  4. Using a levered 1-teaspoon scoop, drop dough 2 inches apart onto prepared baking sheets.
  5. Bake until cookies are set and edges are light golden brown, 8 to 10 minutes per batch. Remove to a wire rack.
  6. Let cool slightly, and then roll in remaining ½ cup confectioners’ sugar.
  7. Store in an airtight container for up to 5 days.
  8. Before serving, dust with additional confectioners’ sugar, if desired.

  1. *For testing purposes, we used Jell-O Lime Gelatin.
