Strawberry Cupcakes with Strawberry Frosting

Strawberry Cupcakes with Strawberry Frosting

Ingredients
  1. ½ cup salted butter, softened
  2. ⅔ cup sugar
  3. 3 large eggs
  4. 2 teaspoons strawberry extract
  5. 1½ cups all-purpose flour
  6. 1½ teaspoons baking powder
  7. ¼ teaspoon salt
  8. ¼ cup whole milk
  9. 1 recipe Strawberry Buttercream (recipe follows)
Instructions
  1. Preheat oven to 350°.
  2. Line 2 (24-well) mini muffin pans with cupcake liners. Set aside.
  3. In a large mixing bowl, combine butter and sugar. Beat at medium speed with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Add strawberry extract, beating to blend.
  4. In a medium bowl, combine flour, baking powder, and salt, whisking well. Add flour mixture to butter mixture in thirds, alternately with milk, beating at low speed just to incorporate. Using a levered 2-teaspoon scoop, divide batter among wells of prepared pans.
  5. Bake cupcakes until a wooden pick inserted in the centers comes out clean, approximately 10 minutes. Let cool in pans for 5 minutes. Transfer cupcakes to a wire rack, and let cool completely.
  6. Place Strawberry Buttercream in a pastry bag fitted with a large open-star tip (Wilton #1M). Pipe frosting in a decorative swirl onto tops of cooled cupcakes.

  1. 1 cup salted butter, softened
  2. 4 cups confectioners’ sugar
  3. ¼ cup strawberry preserves
  4. 1 tablespoon whole milk
  5. ½ teaspoon strawberry extract
  6. ¼ teaspoon salt
  7. 1 (4-ounce) bar white baking chocolate, melted
Instructions
  1. In a large mixing bowl, combine butter, confectioners’ sugar, strawberry preserves, milk, strawberry extract, and salt. Beat at medium speed with an electric mixer until creamy. Add melted chocolate, beating until incorporated.
  2. Use immediately.
