White Pimento Cheese Tea Sandwiches

Cut in flower shapes, these White Pimento Cheese Tea Sandwiches are a pretty addition to your tea table.

Ingredients
  1. 16 slices whole-wheat bread*
  2. 1 cup White Pimento Cheese (recipe follows)
Instructions
  1. Using a 2½-inch flower cutter, cut 16 flower shapes from bread. Spread 1 tablespoon cheese mixture each on 8 bread flowers.
  2. Using a 1-inch round cutter, cut out centers from remaining 8 bread flowers, discarding centers. Place each atop a cheese-covered flower, aligning edges.
  3. Cover with damp paper towels, and place in an airtight container. Refrigerate until ready to serve. (May be made early in the day.)
Notes
  1. *We used Pepperidge Farm Farmhouse 100% Whole Wheat bread.

Ingredients
  1. 1 (8-ounce) block extra-sharp white
  2. Cheddar cheese, coarsley shredded
  3. ¼ cup diced pimientos
  4. ⅓ cup mayonnaise
  5. ¼ teaspoon ground black pepper
Instructions
  1. In a medium bowl, combine cheese and pimientos, stirring well. Set aside.
  2. In a small bowl, combine mayonnaise and pepper, whisking well. Add to cheese mixture, stirring to incorporate. Set aside.
  3. Store in an airtight container in the refrigerator for up to 3 days.
