Zucchini Latkes and Lemon Crème-Fraîche

Zucchini Latkes
Yields 10 latkes

  1. 2¼ cups coarsely grated zucchini (1 large zucchini)
  2. 1 teaspoon salt
  3. ½ cup freshly grated Parmesan cheese
  4. ¼ cup all-purpose flour
  5. 1 large egg, lightly beaten
  6. 1 tablespoon minced green onion
  7. 1 tablespoon minced fresh parsley
  8. 1 tablespoon minced fresh chives
  9. 1/8 teaspoon ground black pepper
  10. 1/3 cup canola oil
  11. 1 recipe Lemon Crème Fraîche (recipe follows)
  1. In a sieve, combine zucchini and salt, tossing well. Let drain for 15 minutes. Squeeze out excess liquid.
  2. In a medium bowl, combine zucchini, cheese, fl our, egg, green onion, parsley, chives, and pepper, stirring well.
  3. In a large skillet, heat oil over medium-high heat. Using a levered 1½-tablespoon scoop, spoon batter into hot oil. Flatten latkes with a spatula. Fry until golden brown, 2 to 3 minutes per side. Drain on paper towels.
  4. Serve warm latkes with Lemon Crème Fraîche, if desired.
  1. Make-Ahead Tip: Latkes can be made earlier in the day and refrigerated in a covered container until needed. When ready to serve, place on a parchment lined baking sheet, and warm in a 350° oven until hot, approximately 5 minutes.

Lemon Crème-Fraîche
Yield: 1/2 cup

  1. ½ cup crème fraîche or sour cream
  2. 2 teaspoons fresh lemon juice
  3. Garnish: minced fresh chives
  1. In a small bowl, combine crème fraîche and lemon juice. Cover, and refrigerate until serving time.
  2. Garnish with chives, if desired.
