Ham and Pineapple Finger Sandwiches

Ingredients
- 12 slices firm white sandwich bread
- 12 thin slices deli smoked ham
- 12 slices canned pineapple
- 1 recipe Ginger Aïoli (recipe follows)
- ½ cup watercress
- Garnish: 12 sprigs watercress
Instructions
- Using a serrated bread knife, cut bread into 24 (3½-x-1¼-inch) pieces, discarding crusts. Set aside.
- Using a chef’s knife, cut ham into 12 (4-x-1¼-inch) pieces, discarding scraps. Set aside.
- Using a chef’s knife, cut pineapple slices into 12 (3½-x-1¼-inch) pieces, discarding scraps. Set aside.
- Spread Ginger Aïoli on one side of each bread piece. Place watercress evenly on aïoli side of 12 bread pieces. On each, ruffle* a ham piece, and top with a pineapple piece. Top each with a remaining bread slice, aïoli side down.
- Garnish each with a watercress sprig, if desired.
Notes
- * Evenly pleat or gather length of ham to fit bread.
- • Blot pineapple slices on paper towels to keep sandwiches from becoming soggy.

Ginger Aïoli

Ingredients
- ¼ cup mayonnaise
- 1 teaspoon grated fresh ginger
- 1 pinch ground black pepper
- ½ teaspoon fresh lemon juice
Instructions
- In a small bowl, combine mayonnaise, ginger, pepper, and lemon juice, stirring to blend. Refrigerate in a covered container until needed.
